Hello, I am a huge fan of your pastas, and am excited to learn that you will soon be adding ravioli to your already outstanding variety. One thing that I would love to understand is the amount of cholesterol per serving in your product. I was shocked to see that one serving provides up to 94% of daily requirement. I have called your company to inquire but alas no response. My local Whole Foods also put a call in for me and they haven’t had a response either. I recognize there is “good” and “bad” cholesterol and I would so appreciate getting some clarity around this in regards to your pasta products. Thank you, I look forward to your response.

Thank you for your comments. Our cholesterol is derived only from the cage-free eggs we use in our ingredients. In our opinion, eggs are “good” cholesterol.

I was delighted to begin using your Pasta, e.g., Roasted Garlic Fettuccine, but then noticed in the ingredient list that you use sugar twice (organic cane sugar close to the top and again further down the list listed as cultured (Cane) sugar). I taste the sweetness and find it an odd taste for pasta. I would prefer sugar not be added in your ingredient list because it takes away from the natural flavor of what one expects pasta to taste like, and more importantly it is not good for you even if it is organic so why add it. This product is otherwise delicious (except for the added odd sweetness) and I will opt for another brand until you remove the sugar. Please offer your rationale for using sugar and if you are stuck on using it? Thank you!

When Maninis began creating a whole grain, gluten-free, rice-free, corn-free pasta flour that is non-GMO from scratch, our focus was to mimic the taste, texture and nutrition of semolina flour (which has only one ingredient, wheat). Do you have any mixes sans corn? Also, how can it be non GMO when there is corn starch? Corn is one of the worst offenders and I’m highly sensitive to it.

Thank you for your inquiry. Papa’s Pane Rustic Multigrain Bread Mix is made without cornstarch. We pay a high premium for all of our ingredients to be certified non-GMO, including cornstarch.

I have been purchasing your Oat Bread MIx from Azure Standard. I have made two loaves so far, and both times the bread caves in on one side. I tried leaving it in the oven an extra 15 minutes, but it didn’t make any difference. When I take it out it looks beautiful, but withing a minute it starts to cave. I just purchased another one of your bread mixes, but now I am wondering if I should have spent the money for it. Can you help me out. I live in Minnesota, so I’m not dealing with any high elevations either.

Is there any way you might start making ravioli squares? I use the lasagna sheets to cut 3×3 squares, but have a lot of left over pasta. Though I do cut it into strips, and cook , I would love to have already to go ravioli. Please let me know. I have a dynamite butternut squash ravioli recipe with sage butter that I would like to share. Only hard part is rolling out the lasagna sheets a little thinner and cutting them. Otherwise this is a quick and easy and might add delicious dinner. My husband who is not gluten free loves it!!

Wow! What a find….GF fresh pastas! My daughter’s favorite dishes prior to determining she had problems with gluten were my lasagna and tortellini soup. We’ve been struggling to recreate these recipes GF. I’m hoping to see Maninis offer cheese tortellini sometime soon so that I can make my soup again! Would also love some ravioli options as well!

Just recently purchased a bag of your Rustic Multigrain flour mix. It is a huge hit in our family. We have struggled for months to find a bread that would withstand not drying out after a couple days. Thanks so much for making such a good quality flour mix. I am thinking about trying your pasta flour as well. Just need to get a pasta roller and cutter first. A question for your pasta mix though. Does it have the recipe on the package as well for making your standard pasta?

I just started using Maninis multiuso this Holiday season. My pies turned out amazing and my husband commented that he liked the GF crust better than the regular one. Thank you so much for your wonderful product. Being both gluten and soy free, it can be challenging to find ready made products. Your lemon thyme fresh linguine is truly amazing. I added a little goat cheese, and some Whole Foods kalamata tapenade, and it was delicious. Can’t wait to try the other fresh pastas. Your bread is also delicious. Finally, something that isn’t rice based, and healthy!!!

We have two layers of packaging because the inner package allows us to deliver shelf stable bread without preservatives! The outer layer is to store your bread either in the refrigerator or freezer once you have removed it from the inner seal.
